
A graduate of the Académie culinaire de Montréal and a native of the Magdalen Islands, Hugo is a self-taught chef with more than 20 years of kitchen experience.
In addition to being chef-owner for over 13 years, Hugo also worked in the kitchen of the reputable Hôtel Les Trois Tilleuls in Saint-Marc-sur-Richelieu. He gained valuable experience working at Le Macpherson Bistro, Domaine Château-Bromont, and particularly at La Bicoque d’Eastman, where he learned a great deal and perfected his skills.
Hugo is now proud to be back home on the Islands, putting his expertise to good use at a restaurant that gives him space to exercise his creativity and achieve his full potential.
Hugo describes himself as a creative chef with an appetite for challenges. He focuses on the flavours, beauty and simplicity of his dishes, which he prepares without using processed ingredients. Everything is made “in-house”!
